April 2020, Week 4

When a seed germinates, the root is the first part to emerge. It situates the seed in its environment, and is soon followed by the shoot and the leaves, which push up as the root seeks downward. The part of the plant we see - the flashy, flowering, fruiting part - is above the soil. But its lifeblood, its origin, is underneath.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
When we think about our summer camp, we follow this same model. In their first years, children dig their roots down even as they grow and develop upward. As they reach kindergarten and elementary school, they're ready to spread their leaves, but in order to do this, they need the right support, the right connections, the right depth of history.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
One of those connections is the connection to nature, and the land. It's a connection we have to be more and more conscious of developing in our urban lives. But it's an essential one: a key part of the root system that grows strong people. For a week this summer, children in our summer camp explore plants, drawing parallels between their own lives and needs and those of their green growing companions. They get their hands in the soil, discover new things about themselves and their peers, and, above all, grow.⠀⠀⠀⠀⠀⠀⠀⠀⠀

This week in your Simple Share...

Spaghetti Squash - 1
Roasted Italian Spaghetti Squash
Ingredients
1 Spaghetti squash
1 jar Petersen Family Farm Roasted Garlic Pasta Sauce
Salt and Pepper
Mozzarella cheese 
Parmesan Cheese
Olive oil
Directions
Preheat oven to 375 degrees. Cut spaghetti squash in half lengthwise. Scoop out seeds and stringy bits. Rub the inside of each half with olive oil and sprinkle with salt and pepper. Place on a baking sheet and bake for 45 minutes or until squash is tender. 
Fill each squash half with Mozzarella and Pasta Sauce. Sprinkle with parmesan and bake for an additional 15 minutes. 
Enjoy!

Chard - 1 bunch
Garlicky Chard with Chickpeas

Oranges - 5
Fresh, sweet oranges from a fellow farmer in sunny California

Lettuce Mix - 1 bag
A blend of our favorite crisp greens grown on the farm in our hoop houses. Delicious used as a salad with your favorite toppings.

Beet Greens - 1 bag
Beet Greens Omelet

Cabbage - 1
Bratwurst and Red Cabbage

Radishes - 1 bunch
Radish Pico De Gallo


Roasted Garlic Pasta Sauce - 1 jar 
Petersen Family Farm

Sourdough Bread - 1 loaf 
Stoneground Bakery
